Did a 9.8LB Boston Butt for the 4th. Smoked it for 10.5 hours at approx. 250 the entire time. I rubbed the meat the night before and did not inject. I also did not wrap the meat and just it cook. It was a little hard getting up that early to start the smoke but the results were well worth it.

I did a 3.3 lb that took 11 hours though the temp ranged from 228-260 .
I wonder if the foil pan you used reflected heat back and sped up the process.

The foil pan was just for transportation only. It was on the top rack the entire time.

Ahh. Just wondering because, I thought of doing a foil wrap to get past the stall.

I decided not to because some folks here reported mixed results.

I did wind up with a very nice bark.

I do not like to wrap for that exact reason. The back becomes to soft IMO and I prefer to just push through the stall. Just makes for long cook day but the results are always worth it.
