Thanks Chris! Small gathering but fun. Had to do porkshots after the butts, grill some shortrib galbi beef (that a friend prepped)on the kettle and play bartender. All good. Chillin at said friends pool today…They look good Aaron. I hope you got to enjoy the party.

True… but I gotta cook it sometime and it still takes a while. Not enough time after work so Fri night into Sat morning is better than most other options. What I really should have done was start it at 1am right before I went to bed but my smoker is so off in temp from left side to right side I didn’t want to leave it all night without rotating the two. It worked, I lived, all good. Hopefully with the next smoker I can just leave it all night.Looks delicious!
Only thing I will add is that, unless it's a spur of the moment cook, there really is no reason to lose any sleep over a pork butt. Done ahead, it reheats fine and nobody but the cook will be the wiser.
I agree with that 100% and cooking ahead and reheating is how I do almost all of my pulled pork. However I will say that having some smoke in the air and breaking down the butts in front of everyone seems to make it taste better to a lot of folks lol. Even if you're pulling them out of a cooler. I only do it for a party or something and only if it fits my time frame. At some partys I have reheated via sous vide in the kitchen and had a pellet tray smoking out of a kettle the whole time. People love the smell of smoke when they know food is coming. My wife and I were a little surprised how may people mentioned that is was smelling so good.Looks delicious!

I forgot to add the part where I run hot and fast. I pretty much run °280~300F° on pork butts.True… but I gotta cook it sometime and it still takes a while.
