Good morning folks.  I decided to get going early with a 9lb brisket in the old 40 inch MES.  I trimmed my brisket and rubbed it down with my own blend brisket rub.  I wrapped it in plastic wrap and put it in the chill chest for 24 hours.


I pulled it out this morning at 0330hrs and it looked beautiful.

 
qd, morning...  looks good..... Are we going to see it sliced or pulled ??   We need more pics...   Dave
 
I've never seen anyone put crushed kingsford in the AMNPS, tell me more about that, what does it do and how does it affect the burning of the pellets? Is it just regular charcoal?
 
It's just regular old Kingsford.  This is actually the first time I've tried it. I'm hoping it will help with the formation of a smoke ring (that's the theory at least). So far, it doesn't appear to have affected the burn of the pellets at all.

Very interesting, keep us posted on how the charcoal affects everything, and of course qview of the final product.

Wow! That's a great looking piece of meat. I've yet to work up the nerve to try a brisket, but posts like this certainly help.
