3 Q's: First Smoke? A Brisket? and Over-Nighters?

Alright, so new smoker got 3 Q's here. Think They should be simple.

1. What would you recommend to smoke FIRST for a complete beginner?

2. Not for starting, but anyone have a good link to a "How to cook a brisket" guide? Seems a lot of different options with temps, times, foil, etc. Also, will be using a WSM, if that matters.

3. What meats require overnight smoking? I know smoking can be time consuming, and was curious to know what meats require it. If I were to smoke a turkey in the future for Christmas or Easter, would I have to start the night before? (we eat late.....7-8PM ish)

 3 Biskets, for tender and juicy flavor are usually smoked over nite
 
For grilling, I recommend hot dogs and hamburgers until the young'uns learn how to build a fire and handle it.

For smoking, you will get many recommendations.  I would go with a pork butt because it is about the most forgiving piece of meat out there.

From there, I wish you the best as you learn and enjoy the craft.

First smoke, I would say chicken or ribs.

Like cwalk said just use the search box for brisket tips.

You would not need to smoke a turkey overnight. A typical 12 lb. turkey would take somewhere around 6-7 hours.

Brisket or pork butt would require anywhere from 12-20 hours of smoking depending on the size, so in that case you would probably want to start it in the evening for the next days dinner.
