Whole brisket $3.99/lb
Had the dude pull me one. Pretty large fat cap under flat, but they are separating flat/point and wrapping separately. Burnt ends with point and some 80/20 brisket burgers with the flat. $53.00 all in. Check your sale paper because they differ regionally.
 
No Publix around central Missouri - but I will check out the local grocery stores as they seem to have similar sales at times.
 
You asked them to do it or they just did it on their own ??
I talked to Dennis the meat cutter and explained i wanted the point and flat separated and wrapped separately. I have to see how that works out. he said it would be ready in the morning. I was there at 7:10 AM just after opening. he was still prepping stuff in the cutting room for whatever. he was an older dude. would not have had a kid attempt it. I could do that with google but I'm lazy and my cutlery skills have diminished.
 
Man, I wish we had better brisket prices. Lowest I've seen in a long while was $4.49/lb.
 
ready for the weekend. point will be burnt ends and the flat will be mostly hamburger. I wouldn' smoke a whole flat unless it was for a crowd. $53.00 all in.

That's a nice brisket . Must be the high end of the choice scale .
Looks like the old boy has some meat skills to .

That flat will make nice grind . Another good use for part of it is Italian beef .
Last one I did I cut part of it up like this .
Ranch powder powder beef base and a jar of giardiniera in the slow cooker .

De fat the broth and shred it up . Make a good sandwich .
