Hello again all,

I haven’t posted any, outside of my first smoke thread, but I’ve been obsessed with stalking the forum.

Today I’ve got some hickory chips instead of the pellets i was using and i read on here to try 3-5 chips at a time (if you have time to babysit and keep refueling) to keep a light smoke. So that’s my game plan.

I’m using some store bought chicken rub (from last weeks smoke) and added some brown sugar lol I also read on here you can’t mess up a rub (don’t say these things if you don’t mean them, guys, I’m very literal haha)

I’m going to do a no foil method bc I’m lazy and read (this is a trend...I haven’t read this much since college) that a lot of folks have success doing a straight smoke for more “bite” on their rib which I enjoy.

Using my MES 30 set on 230ish and I’m going to let it ride for at least 4 hours before I temp check. My understanding is they need to cook long enough to break down the fat and such even if the temp reaches the “x” in a short amount of time.

sounds like you have a plan, i throw my baby backs in at 225 for 5 hours, havent had a miss yet. They always turn out defreakinglicious. I too am lazy and dont foil.

Do you have a sauce recipe that’s very simple, aside from store bought?

i just use garlic salt, coarse ground black pepper, onion powder and everglades bbq rub......simple, and easy peasy, the everglades bbq rub creates an almost bbq sauce like glaze. there are many gurus on here that would make their own rubs, sauce etc, but I have learned from many on here, its what you like and what works for you. This place rocks
 
They turned out awesome! Much better than the chicken last week. I was afraid at first i didn’t get enough smoke flavor but boy after resting them, they were just right. My temps were up and down bc it’s so cold I may or may not have opened up the door too much lol

Buddy was supposed to provide the beans but he forgot so we stuck with chips and slaw
