This was my second time firing up the Colossus. I had watched a few YouTube videos of party ribs and thought I would give it a go. I was also out of salsa so it was time to make some more.
While it was heating up I cut up a slab of baby backs and covered them with Killer Hogs BBQ rub.
After an hour I flipped the ribs and moved the veggies into the firebox for a good sear.
Veggies were done pretty quickly.
Tossed them into the ninja with about a tablespoon of Hickory smoked sea salt and the salsa was done.
At two hours the ribs were placed in a tin and were covered in Jack Daniels Honey BBQ sauce, Texas Pete's garlic hot sauce and about 3/4 of a stick of butter. They were covered in foil just after this pic.
45 minutes later they were placed back on the rack to dry out for 10 minutes on each side.
