2nd ECB Smoke Ever...My 1st Brisket

Personally?  I could care less about the smoke ring.  If the meat tastes right, it is right.

As to the ECB?  We joke about it.  Truth be known?  There are many old farts like me who started with those!  For some, like me, it was the next logical step after learning about grilling with indirect heat.

My old ECB still inhabits my patio.  I got some great smokes from it.  I just don't have the heart to part with the memories!

That be true. Retired mine after 32 years of service.  Great job on the Brisket.
 
Thanks Chuck. I'm a lazy ass too. For some stupid reason, I felt I should do my first brisket the hard way. Next time I probably won't think twice about using my MES + AMNPS...will be so much more relaxing.
I hope your MES has a cool redneck tie too!!! it just won't be the same smoke without it!
 
Looks like you did a fine job, don't be skeerd of the packer, they're a blast to cook. I did a 16lber on a traeger Jr, it was in the sauna for 17hrs at 225 degrees. Had to build a box above the pellet chamber to hold more pellets so I could go to sleep for a while. When I use my built in block smoker, I build a fire in the fire pit next to it to make coals to add to the smoker. Less chance of flair up and easier to control temp. Again, very well done my friend.

Thanks for the kind words of encouragement, and that box sounds like a useful mod.

One day I hope to graduate up to a WSM and a Traeger or something. Until then, looks like I'll be alternating between my  ECB and MES for quite awhile I'm guessing.
