Hey all

doing first cook (18lb prime brisket)on the OkJ reverse flow and seeing issues when meat is on. When seasoning/no meat on the left 75% of cooker is within 5 degrees. Far right directly above water pan to far left is 15f. I was extremely please with this.
When I put brisket on the far right (6 in from right) would be 275ish and far left is 220. Both temp probes on top of door read same and are calibrated. Grate temps are with xr50 and are calibrated

questio. Is would a 1/2” plate with small gap under placed on far right side help even out temps. Baffle plate in there now is 1/8” lavalock. Or possible a few fore bricks running width of cooker and next to water pan. Would like to even out with 25 as I plan to do
Multiple briskets and hogs

for reference the glove to far left is within 25f.Right of this a lot higher
