Last month i saw whole briskets on sale for $5/lb which is a good price where i live. With the beef prices getting out of control i thought i'd get two.

Barely squeezed them in my OK Joe reverse flow smoker. They cooked fast...about 8h for one, 9 for the other.

No texas crutch this time so the flat has a little bit of bite.

How do you like that unwrapped flavor? I'm firmly in the no wrap camp because the flavor cant be beat :)
 
Eight & nine hours? That thing got turbo 1,000° speed?
Kidding. I once had one finish in 8 hours, but I still don't know how? Must have been a racing cow.

8-9 hours, that's a Hot-n-Fast cook for sure, what temp were ya cooking at?

Can't remember last time I smoked a Brisket, prices have been insane down here.
