I have to give kuddo's to Chef JJ for the success here. I followed his thread Kielbasa from start to finish on this run and all I can say is OMG..... home run out of the park. My brother came home for Christmas with 45 pounds of meat, Then told me what he had and said I want you to make me some of that sausage you make...... HELLO ! He had 35 pound of venison and 5 big pork butt. I made Home Brew IPA beer brats, Snack Sticks, and the Kiebasa. Now I have to apologize for not having to many pics of this fee-ass-co.

I had this venison roast in a wet cure for about three week of maple sugar, brown sugar, salt, and cure. this thing turn out amazing also. Needless to say we did not go hungry this Christmas.
