1st time at Hotdogs and I need some advice.......

I'm getting ready for my first try at Hot-dogs

.  I've been doing a lot of research on recipes and I've narrowed it down to this one .....http://www.wedlinydomowe.com/sausage-recipes/wiener..... So here is my question, it says to use Coriander,  What I found at the store was Ground Coriander Seed....Is that the same thing or different ??? Can I still use it ? And it calls for White Pepper, which seems to be as hard to fine as a needle in a hay stack also, so I was just going to go with some old fasion GBP (Ground Black Pepper). Any thoughts ? Thanks ShoneyBoy
 
ground coriander seed is coriander. Do not substitute white pepper with black pepper. they are two totally different flavors.. white pepper smells like a dirty old sock...LOL But its good in hot dogs..... order it from amazon
 
 
For sure ground coriander is what you want just like DDF said. And I have found white pepper in Walmart (not always in stock) Albertson's, Fred Meyer, etc.... Sometimes it's hard to find. It's in a small container about 2" tall. Well at least the stuff I buy is...


It isn't ever on the top shelves with all the other spices in my stores. It's down lower, but in the same area. Keep looking and you should be able to find it. It's more of a powder than a granule. Never made hot dogs but it seems white pepper would be better as far as looks go. Never seen a regular hot dog with black pepper flakes in it. But I'm sure it would taste fine.

That is to FUNNY !!! My daughter said that she didn't think that she would be eating anything that smells like dirty old socks.......LOL...... I bought some cheese last week, you could smell it before you opened the package it was in......When I bought it home no one and I mean no one would go near it !!! It's all mine....the problem is they don't want me eating it becaues it smells so bad.....Pepato cheese......http://cheese.about.com/od/cheeseofitaly/p/Pepato-Italian-Cheese.htm good stuff !!!
 
If it says coriander, it is certainly the ground seed.  Otherwise you would probably hear cilantro, which is the Spanish for the leaves which are usually fresh.  Spice vs herb if you will? Huge bottles of good stuff from Costco.  Not a bad investment as coriander is a fairly common sausage ingredient.

I agree that the white and black peppers have very different flavor profiles.  I wouldn't normally worry about that one much?  However, this particular recipe uses a lot of white pepper as to the meat ratio?  White ground pepper isn't that hard to find. Also, for spices you don't use much of ?  Some markets carry small containers of "Tone's" white pepper and other spices.  Comparable and cheaper than the big name brands.  Dare I say Wally World or another place we just hate to go?

Also, I like buying spices in bulk/no name packs, for stuff I use more regularly.  Check out your mom and pop ethnic deli's or ethnic stores.  Often just in plastic bags with the computer printed label.  Not talking about high end, New York deli's here where everything would be $100 per oz !

No doubt that white and black taste different, but there's only a tsp. being used in 2 and 1/4 pounds of meat. There's nothing incompatible about black pepper here, it's often used instead of white by people who have a strong aversion to the extra rotundone (the stuff that makes it smell like barnyard) in white pepper. Some folks can't tolerate it at all.

As others have said, it's usually very easy to find, but often very over-priced!!!

I've always liked the aroma and flavor of white pepper....  thought it was Umami....   cow pies smell like money too...

I'm pretty sure I bought that little jar of mccormick white pepper at super 1 not long ago. It does smell like ass but can be good if used mixed with the right stuff. We use it to make a sour cream based dip.

ETA: Good luck with the hotdogs and let us know how they turn out. I want to make some too.

I took yalls advice and I went on a search for White Pepper today.....I found this at Albertson's


Regular price....$7.99 some kind of sale price $3.99...so I put it in the buggy.....I keep looking around and found this one........


20oz.....There was no price on the shelf. So, I asked one of the monsters (kids

) to ask someone at the register for a price......and as usually no one would, so I just grabbed one and thought to myself if it was under $10.00 I would get it......While we were checking out....I asked for a price on it.....the cashier said that it was not in the system......and asked for a price from the floor manager.....he came over and said $1.99.....I bought 3 of them !!!!! So White Pepper found and I have a ton of it now !!!! I think I have everything I need, so I'm thinking of working on this tomorrow

That's a great price! But I'm curious as to why the picture on front shows a red bell pepper, celery, garlic, onion and a hot pepper. Check your ingredients. You may have a "cajun" blend based on white pepper. If so it's probably really good, but might make a difference in your dogs!

The company is out of New Orleans La....All of there labels in the store look like that, the company is just cheap I guess....They just print what is in the container on the front of the label.....There is no other ingredient list on the bottle other than what is stamped on the front label.......ShoneyBoy

Anyway, can't wait to see how you make your hotdogs. I'm deciding if I should use a gift certificate for a grinder or hunting boots. I need both...

I don't think this was the everyday price, I do believe that there was a mistake made by the manager. Especially knowing that they want $4.00 for a 1oz bottle of McCormick......About the decision between the grinder and the boots, weigh you options on what will you get the most use out of.....my wife and kids helped along with a gift certificate that I had, buy me my grinder and I've never looked back or been happier......One of, if not the best investments I've ever made.......So far, I've had more fun with this hobby than I've had with all of the others combined.......SB
