Thanks to some suggestions I went after a roast for sammies today. Wife couldn't find a big roast so I did 2 small (turns out I could have done 1).

Seasoned with SPOG and smoked with cherry for almost 2 hours to IT of 135ish. Got lazy and didnt take pics during this time.

Took the drippings and water in the pan below the meat and refrigerated it.

When done, rested for an hour and then took a couple sneak slices for tasting purposes.

Ridiculously good.

Then refrigerated for a couple hours.

Sliced it up thin and put in a pan with pan drippings/red wine/mushroom/butter reduction.

Served on a crusty roll with melted provolone, sauteed onions & mushrooms and a killer spread I made with Woebers horseradish sauce mixed with Ninos asiago spread and prepared horseradish.

Wow!!! This was ridiculous good!!

Question to you all... I have 1 small roast leftover. Freeze? How to defrost and reheat later? Thanks!
 
I freeze large pieces of smoked meat of all kinds all the time. I would freeze. may cut into ll size pieces and vacuum seal.

That looks great all paired up with cheese etc!! I did one last week and froze it whole since I didn’t have time to slice. Sliced today and vac packed some.

They look GREAT! Nicely done. About the only cooked meat I freeze is turkey, and occasionally brisket. I generally get creative with the leftovers and make everything from soup to stroganoff.

I vac seal, then when ready to thaw, I put the bag in cold water. Once loose in the bag, I take it out of the bag and use the thaw feature of my microwave and reduce the time for the weight.

Very Nice roast beef....is that eye of round cut? i love making those cheaper round roasts into sammies...smoked roast beef is dynamite! if you want like a Superbowl party situation make something similar with Prime Rib usually on sale around Christmas and after smoke whole roast and shave for french dip with au jus...
