1st Smoke using my new MES 40 / Smoked some Ribs for 1st smoke

I LOVE this website !  Been on here everyday since I found SMF, can't get enough info, ideas and recipes ...

 With that said, today I fire up my new MES 40;

 and smoked some Ribs;



of course, ya don't wanna smoke em plain, so I put a good rub on em;



we used 3 Racks of Pork Spare Ribs and 1 Rack of Baby Back Ribs with membrane removed from back of ribs (which I learned from this site).  I used the 3-2-1 Method (that I learned about on here), made up some Foiling Juice (again, learned about such a thing from the great members on here ! ) and smoked them using AMNPS with the Pitmaster Blend pellets, all bought from Todd ( Thanks Todd !!! )  temp was set at 225 degrees, today our temps in NJ were in 40's.  MES 40 went as low as 223 and no higher than 226, over the 6 hours... remarkable !

 So this is what the end result looked like;



I was in a rush, so I only took pictures of the 1 Rack of Pork Spare Ribs, but the other 2 racks came out just as perfect, and here too is the picture of the Rack of Baby Back Ribs.

 My wife and 11 year old daughter were raving over how well these tasted !  I will say that I should've applied the Sweet Baby Rays sauce (that I bought for these), but I wasn't sure if it would mess up the taste with the Foiling Juice on it.  I loved that I got to taste the ribs the way they were, and they were great !  But next time, I will apply the sauce to it to give it that over the top taste, ya live and learn, but I'm VERY happy with the results of my 1st smoke !

 Already plan on smoking an assortment of nuts, using the recipe that Todd put on here, and for the Super Bowl I'm going to take a shot at a pork butt, already plan on starting it at 9 or 10 pm the night before and let it work it's magic. 

 Thanks to EVERYONE who has posted on SMF, it is everyone like yourselves that have made this newbie an addict !

    Great Job! There is nothing wrong with adding additional sauce, I do. It adds a different layer of flavor to the meat...JJ

Totally agree with you. Im a newbie and have learned so much from SMF! Completely hooked! And by the way, GREAT looking ribs!
 
Nice job on the ribs, and good luck on the pork butt for the super bowl. I'm sure it will turn out great with as much reading as you have done on hear. Just remember that with butts they have a mind of there own. Just go by internal temp and you'll have a winner.
 
hey, yours went better than mine.  I think my smoker needs a few mods...  Nice looking smoker you have...
 
You did it!  Great looking ribs!  You SO can do a butt now.  Just follow some of the things you have been reading. You will be good to go!  Do the IT and not the time for the butts.
