Hi all,

I've made a few posts to the forum here, but I am still a relative newbie all the way around (forums and smoking).  I have had a few successful smokes using my MES 30 (a couple of pork shoulders and some ribs), but I have been guessing as to how often to add wood chips.  I have not modified my smoker in anyway, and I've been adding chips about every half hour while I am applying smoke.  Is this overkill?  The reason I decided on this is I tried smoking some fresh brats once and added chips something like every hour, and they weren't as smoky as I would have liked. 

I've been lurking on the forums for years, so I know it shouldn't take too long to get a great answer.  Thanks everyone.

There's really no set time on adding chips, because when you get it going good, you get too much smoke---Then nice smoke for a short time---then no smoke.

If you've been lurking for years, you must have read about the AMNPS. Get one & never look back----Perfect smoke for up to 11 hours without touching it!!!

BTW: The AMNPS comes from your state--- MN.

Yes that will be my next smoking related purchase I think.  Too much life happening at the moment to even do any smoking, but I plan on buying an AMNPS in the near future, and I've kind of been reading up on mailbox mods too, so that could be a fun project for me.  But, I work full time, go to school online full time, coach basketball part time...oh and did I mention have 2 kids under the age of 3?  On top of that we are trying to sell our house, so smoking has been put on the back burner for the time being, unfortunately.

LOL---Busy fellow!!!!  Take a break in place!!

Try the AMNPS on it's own first, before you build a mailbox thingy. It's much better all around to not need it.
