I've made a few posts to the forum here, but I am still a relative newbie all the way around (forums and smoking). I have had a few successful smokes using my MES 30 (a couple of pork shoulders and some ribs), but I have been guessing as to how often to add wood chips. I have not modified my smoker in anyway, and I've been adding chips about every half hour while I am applying smoke. Is this overkill? The reason I decided on this is I tried smoking some fresh brats once and added chips something like every hour, and they weren't as smoky as I would have liked.
I've been lurking on the forums for years, so I know it shouldn't take too long to get a great answer. Thanks everyone.
