Hi fellow smokers...Just wondering, on an Electric Smoker (LIke the Gourmet Electric ECB), how long should I pre heat? 15 mins...30mins...60,ins? When should I add the wood? Do I or dont I need the water bowl filled?

I was able to buy an "inline" fan speed control (kinda like a 20 dollar rheostat) and "control the temperature". I want to test it with 2 pork steaks (typical st louis an :) ) on a reverse sear to day. any assistance would be grateful.
 
Blue, morning....  My MES 30, I preheat it for at least 1 hour at full throttle... 275-300.....

The pellets or chips are in the smoker, in a pie tin, at this time to dry out....

I wouldn't use a water pan when trying a sear...

Add the wood to the smoking pan and when the smoke turns to the thin blue, put the meat in....
