Gonna break in the new AMNS on some cheese.  Got Apple,Cherry,Peach,Pecan,Maple,Oak Barrel, and Hickory.  Probably going to keep it basic with sharp cheddar, mozzarella, and swiss.

Which wood produces the the best all around flavor?

I expect there will be multiple opinions here, so tell me what it is about a particular wood you like.

Apple, Cherry or Maple are all good choices for smoking cheese

Hickory can have a little "Bite" to it

I smoke for about 2 - 2 1/2 hours, but I like a light smoke on my cheese

Some guys like heavier smoke, and will go for 4+ hours
