That CB looks great Ray. Nice color too. Your knife work is impressive as well. Great job. Stay safe.

Well thank you Mike! My wife Jan always gets nervous when I'm at the island with a blade in my hand, I only wear one when filleting fish. Thanks for the Like Mike, I appreciate it. RAY

Fantastic job, Ray. The color is just downright beautiful. Seeing all that great meat is really pushing me to make some more back bacon, but that's gonna have to wait til Spring after the Winter Log Haul. I'll just have to suffer til then. LOL. Gary

Thanks Gary, we are all prisoners of our environment to some degree, spring will be here in no time! Thank you for the Kile Gary, it is appreciated. RAY

Awesome looking Canadian bacon, Ray! Nice color.

Thanks Push, this ought to be plenty to last the year, my wife doesn't eat much of it! Thank you for the Like, I do appreciate it.

Looks great. Nice job. Thanks for all the details. Rob

Thanks Rob! It's a easy recipe to follow and one I've used for almost 15 years.

Wow Ray! The CB looks fantastic, great color on them and quite a haul too!

I need to make some again while it’s still cold (I’ve plenty of time!!) Your post has me pushing this up higher on the never-ending to do list.

Great job on the loins! I gotta say, the eggs benedict pic brought it over the top. Looks delicious.

SHR, I missed this post, awesome looking bacon and that smoker really shines !

Thanks CM! It's been a great smoker, about as good as a man can get. I bought it on sale at the Reno Cabelas on the way home from a successful gaming trip where I'd won $3K. They were going for $1500 and were sold out so they loaded the floor model into the back of my truck for $1200. Now they can only be had straight from PS Seasonings who made them for Cabelas and they go for $1800. I got it for smoking sausage but it does so much more, 13 years and never a glitch, and it was pretty much free! Thanks for the Like, I do appreciate it. RAY

SHR, I bought the Pro 100, 7-8 years ago on your recommendation ( a sausage making forum), You steered me right and I love the thick insulation that lets me smoke with no issues when the temps are below zero .
