I have bought a local, heritage breed turkey to smoke in my 30" MES. It's 12 pounds. I'm brining it overnight. My current plan is to program it for 275 with the expectation of it cooking in around 4 hours. Does this sound reasonable? Any other suggestions?
If I was you I would give yourself more time. You need to consider in recovery time from when you open the MES to add chips and spritz. So If you want it done by 5 start at 11. Worse case is its done early and you just foil, wrap in towels or blankets, and store in a cooler to rest for a hour or 2.
Now Brian has given you some really good advice. You can make up alot of time the foiling and in the cooler time. I have kept some stuff in the cooler as long as 4-5 hours. If it tells you anything it was a prime rib roast.
