Well, Lady luck smiled down upon us this trip. The food was outstanding, the weather was great, the fishing was hot and the comradery and laughs were world class! We had a great time!
Friends arrived at the camp around 9am Thursday morning. We got them unpacked and settled in while waiting for my buddy's brother to arrive by rental car from the New Orleans airport. Then we went out for some redfishing with the falling tide (high tide @ 10:30am so perfect) Finally left the camp around 1:30pm and started fishing around 2:30pm. Ended up putting about a dozen reds in the box before time to call it a day.
Dinner Thursday night: Crawfish Etouffee over rice
And I made homemade peach ice cream. Got that churned and frozen for the weekend...
Friday morning we went offshore. GREAT DAY! Winds 5 knots; seas 1 foot, 9 second period. Picture perfect day! We caught our limit of red snapper (4 per man) and put some vermillion. lane, and mangroves in the box too. We ended the day at one spot only needing 6 red snapper to finish out our limit...put 6 fish 10+ # in the box in less than 20 minutes. That was icing on the cake!
Dinner that night was elk pot roast with carrots and potatoes over rice. Put that together night before then on ice so all I had to do was put it in the crock pot base and turn it on before walking out the door to go fishing...So good!! (and peach ice cream for dessert)
Saturday we woke to unsettled weather and had to hang around camp for a couple hours, but were able to fish that day. More red snapper and some bonus white trout. Dinner that night was 10# cajun boiled 10-12 count white shrimp, 1" thick grilled ribeye steaks from a farm to table butcher shop in Kansas (very delicious!!!), farm fresh corn on the cob, and fresh garden zucchini and yellow squash. (and peach ice cream for dessert)

Sunday was a washout. We hung around camp and recuperated from 3 hard days of fishing. Had a huge breakfast, cleaned fish, dodged the rain, washed the boat, stowed gear, and my buddies packed up to leave a day early due to bad weather Sunday night and into Monday. No complaints though as they brought home over 100# of filets; and I got over 100# of fish carcasses and old bait for my garden bed.
Lunch Sunday was Fresh fried walleye po-boys with home grown tomatoes on Leidenheimer bread with homemade baconnaise! Also had some fresh fried white trout and the left over boiled shrimp for an appetizer before the po-boys.
....and....Peach ice cream for dessert!!!!
That fish with the baconnaise!!! WOW Incredible Combo!!! Nirvana!!!
Overall it was a jam up trip! The food was awesome and the laughs were world class!!
