100% Guaranteed Premium Master Cut Aged Tender Beef

Howdy! 

Here in Northern California, there are two mainsteam supermarkets (Lucky's and SaveMart) that carry what they call "100% Guaranteed Premium Master Cut Aged Tender Beef."  Unfortunately, I have been unable to find ANY usefull information on their brand of meat, grade, processing practice, whether it is great, horrible or about the same or better than Safeway's Rancher's Reserve.

Any information you can pass on will be most appreciated.  Thanks!

What most supermarkets sell as "aged" beef is actually wet aged.  The consensus is that this might slightly tenderize but does nothing for the flavor of beef. They like it because it is kryovaced and that extends shelf life in the supply line. At savemart, the packaged beef on the shelf will be select grade.  About the only choice beef you will find at Savemart would be the steaks in the "butchers" meat case.  I have never seen any prime beef at Savemart.  One good alternative is Costco, which, in my opinion, will give you a much better value.

Thanks Venture for the details.  Costco is my regular stomping grounds for meat, but Savemart, Lucky's, and Safeway have been more convienient.  Obviously though, there is no replacement for quality.  Thanks again!

the easiest way is ask the butcher at the supermarket. Even Lucky's and savemart will have their own butcher. They should know if it is select or choice and if aged, how long.
