So I've been seeing a lot about 0-400 wings and most posts that I see say they come out "perfect". I usually want a little lower longer on mine so I can get a bit more smoke, but gave it a close attempt. My smoker took close to 20 min to actually get up to temp and when I flipped at 30 min, I knew they would definitely need another flip and more time.
All said and done, they came out close to perfect at about the 85 min mark. I pulled off most of the flats and drums and just leaving a couple large ones for the 300 sec smoker shutdown and then pulled them too.
They were really good, I usually use my own rubs most of the time but for this batch I seasoned with Aussom Aussie's Barbie Dust which is good on most everything (love their stuff). Also got some charcoal pellets that I mixed in 50/50 with the Sams competition blend to see how they were. I'd say I didn't really notice a big difference but I did just get this smoker so might need a few more cooks under my belt before I can tell a difference.
I will probably drop back another 25*-50* and add a tad more time in the future for my normal cooks, but this was a good trial at a new temp when I need to get them done a little quicker.
