Here are a few pictures of some pork chops I got from the farmers market, they are about 3/4 inch thick and I trim the excess fat per instructions of Cook Air. I never went past level 3 because at that level I was already at 550 degrees and raising. Cook till well done!

I smoke and seared a 2.70lb Tri Tip seasoned with salt, pepper, garlic, parsley, and some chipotle powder. Did a reversed sear with some red oak over lump.

So is my first attempt to do a 9lb Pork Picnic on the Mini:
1. Using lump charcoal with 9 pieces of KBB to start.
2. Using a combo of cherry and pecan woods.
3. Using a commercial brand of seasonings.

Cooked my first ever Tomahawk Steak on my Jumbo Joe, Used reversed sear method using only lump charcoal nothing else! Here's a few before and after shots from my phone, picture with steak cut is Med rare.
