[h1]Has anyone heard of or used a bone-in brisket?[/h1]
That is exactly why the cut isn't around. With the invention of cryo-packing in the early 70's lots of bone-on cuts went to de-boned. The early bags weren't strong enough and the bones would break through the bag.Can't tell you I've ever seen vacuum packed, bone-in brisket.
