    Pork butt is pretty forgiving, I'd just run it higher while cooking your munchies and then lower it back down

    Oh yea I'm smoking all this on a slightly modified(baffle plates, charcoal box, firecaulked) Brinkman Trailmaster around 260° on oak and mesquite wood

    Haven't posted here in awhile but steadily smoking good eats. Todays menu is a couple racks of ribs and a pork butt. Trimmings from the ribs on the right. Ribs did 3-2-1. Here they are about to get a short rest before slicing. Had one bone fall out. Pork butt still has a ways to go.
