I'm just curious here. Why do we cook a brisket to 190 IT for slicing when the chart that came with my maverick says medium well is 150ish. Same for a boston butt pull at 205 It but my chart says 160 for well done.

Thanks for the info... Thermometers I've been getting a lot of mixed readings. My MF propane smoker has a gauge that I don't trust so I bought an oven thermometer to put in the smoker. I was having to open the door to check heat but it was close to the one on the door about 10 degrees...
I feel your pain. I put a 3.5lb Boston butt on at 330 and just hit 144 IT and it's 1000 now. Love my smoker but have got to learn how to time it better!
