Rubbed down with a Sriracha Compound Butter and covered with Sriracha Powder and Italian Dressing Mix. Smoked at 250 for 2 hours then 325 for 1 hour and 20 min. i forgot to put the beans in until the last hour, but they were fine. I’m becoming a big fan of the Sriracha Powder.

Picked up this Pit Boss 820 for $100 off Facebook. Has a hole in the heat defused and the drip tray, pit a piece if steel on top of the heat defused and foil around the drip tray and works just fine. Is it worth upgrading the controller to a PID controller? Seems like the temperature swing is...
I have 18.2 ohms on my element, good voltage to the connectors and the element will not get hot. Ideas?
I got it at an estate sale with the cold smoke attachment for $60.
The inside is stainless also, just over 8ft3. I have been looking thru threads and found one that is almost exactly the same, however didn't really address the stack issue.

Picked this up for $100 and $60 in ferry tolls to get it. Got a PID, K type thermal couple, SSR/w heatsink and 12 'of 3/4" stove gasket off Amazon for $53.
Came with the insulation and a 1500W heating element.
I think with just over 200 into it I am still doing good.
