upon further investigation my lid gauge and maverick were 150 degrees apart. I opened the door and found out that the maverick probe had fallen out of the clip and was down near or in the coals. problem fixed and all is well , back on track. :yahoo:

The pork turned out great. I ended up foiling them the last two hours to speed things up a bit. I finished one with a finishing sauce and the other without. I can't decide which I liked best they were both so good and juicy. I took some into work today and it all went really fast. Here is a shot...
10 hours into the smoke and still rolling along at 223. I absolutely love this smoker :sausage:. I'm not going to foil these and see how they turn out. I hope they don't come out dry.
This morning I threw 4 7.5 lb picnics on the 18.5 wsm. My girls are home monitoring the temps as I have to work today. I can't wait to get home and see how this smoke is going. I have loaded it up with ribs before but never this many shoulders.

Thanks vegas, I went to allied charcoal and wood and bought a forty pound bag of lump and a small box of pecan chunks. I am going to experiment with different types of fruit woods and they sell quite a variety there.
