MES 30 Temperature fluctuations and using a floor tile

I know that it's the nature of the beast for the temperature to fluctuate on these electric smokers when the heat kicks on and off. My temperature seems to go up a good 15+ degrees when the element starts heating up. I'm trying to maintain a 175 temperature and it will shoot up to 185 -190. I...

Didn't want to, but had to... mailbox mod

Bought a Masterbuilt Electric smoker a few months back and have been using it a couple times a week the past few weeks. I posted in the AMNPS Tester Forum about the sawdust probably igniting and instead of lasting a few hours, only lasted about an hour. I really didn't want to build a mailbox...

AMNPS seems to be burning way too fast

This is my 3rd smoke on a masterbuilt electric. As well, using the AMNPS tray with sawdust. I filled the tray about half full today with sawdust and only went up within 1/4 inch of the top of the tray/dividers. I lit one end and made double sure that only the one spot was lit. With-in...

Question on using a mailbox mod on mes 130b

We sold our house last year and am presently living in an apartment till we find a townhome. Getting older it was getting harder for me to maintain that large place so we decided to downsize. I used my UDS all those years there and enjoyed many a Q from it. Unfortunately I can't use the UDS...

Just the wife and I for today.  2 slabs of babyback ribs, some country style pork, handful of ABTs on the UDS.  Later, tator salad, bbq beans and some deviled eggs. Took this pic about an hour ago when I first put things on.  Hopefully I'll update with more later.

Who else only uses a pit thermometer?

Just curious as to how many of you who have cooked so much meat on your pits over the years and know your pits so well that you only use a pit thermometer and only take the temp. of the meat when you know it's almost done if at all? The only time I use a meat thermometer of any kind any more is...

    Lovin the pork with qview

One of my favorite ways of doing pork butts this summer is to buy two pork butts, remove the meat from the bone into smaller pieces and cook on my UDS.  I rub the meat just before I put on the pit and cook at 245 - 275 most of the time and then the past few hours I spritz with a mixture of apple...

Deboned pork butt, ABTs and Cowboy beans for the 4th

No pic of the beans yet, but here's today's fare.  Deboned pork butt with rub on a crowded UDS.  Wanted a shorter cooking time. I love slopping these things down towards the end with my sauce for a good caramelized bark.  ABTs ready for the pit later.  May have to put them on my gas grill...

Finishing touch on my replacement UDS

I finished my little removable table for my replacement UDS today.  Used one of those plastic cutting boards and made it so I can take it on and off. Simple eye bolt and "S" hook attachment. I am looking for a better looking lid for it, but the old one that is on there now still works perfectly...

    Smoked meatloaf today w/qview

I make these a couple times a year.  Usually I stuff them with ham, cheese and bell pepper but this time I just ran with a simple meatloaf recipe topped with bacon.

    Pork Butt pieces tomorrow

Just finished my replacement UDS the other day and got it seasoned. Wanted to cook something this weekend but don't want to do pork butts for pulled pork but wanted some pork.  I bought a smaller pork butt and cut it up into smaller strips/pieces etc and trimmed it up with-in reason.  Will give...

What's a good cover for UDS

Just built a new UDS and want to protect this one as much as possible this time. What is a good cover that goes all the way down the barrel with a weber dome lid on top?

Weekend pork butts for pulled pork with qview

Bought two smaller pork butts the other day, one 6 lbs and one 4 lbs (was just me and the wife).  Simple rub of brown sugar, onion powder, garlic powder, cumin powder, sweet Paprika, Bill's Dark chili powder, black pepper and Tony's seasoning. No additional salt. Fired up the UDS with a combo...

    Opinion on air intake.

I've been cooking on a UDS in one form or another for many years. The one that I made some years back and use now has two 3/4" intake (ball valves) located on each side of the drum.  I usually have both of them open while the coals are coming up to cooking speed and then close one off and adjust...
