A late follow-up .
Rested the brisket (still in foil) in beer cooler for bit over two hours before slicing.
Turned out to be great success! Will dare to say my best brisket so far. Our guests went as far as to say they never tasted meat like that. The looks on faces really made me feel great...
Thank you for your input. Probe indeed seemed very tender. In cup of boiling water meter read 210.
I pulled the brisket into a beer cooler 10 min ago. Barely over 7hours cook time. I'm at loss .
Worst come to worst I will finish it off in the oven

Fire started at 8am, brisket went in at 8.45
Thermometer showed 165f at around 1pm at which point it was wrapped in foil.
3pm the thermometer shows 200-215 depending on where I poke. I'm afraid to poke it anymore honestly, I think I made enough damage trying to find...

Pork Baby back ribs, I can't decide whether these are my favorite food to BBQ. My recipe is not fancy at all: salt and off the shelf McCormick texas beef rub. I don't wrap and don't use BBQ sauce during the cook. before smoking the ribs do get a very quick time on grill to get that crispy...
Very good looking knife . However courtesy of significant other we already have two 8inchers. Both very cheap, but sharpened properly they still cut great. With that 8"chef would not be my choice of knife to trim a brisket. Just my 0.02 worth
After returning the wrapped meat into cooker IT started climbing rapidly , probe was placed it middle part of the flat , just about where it meets the point . Thermometer was showing 198 ~3.5 hours second needke therm agreed with the wireless one) so I unwrapped as I was afraid it will be...
My second try at brisket. First one I only got a bite as it disappeared without a trace betwee the guests. rumor had it that it was amazing.
Got up late, it took longer to trim that I planned , went into the smoker at 7:30am, quite bit later then i planned to.
"sear burner wouldn't stay lit" I think I found your problem right there - you not burning wood. I've yet to have coals that would not stay lit till they done.

Never tried so perhaps I don't know what I'm missing, but to be honest I can't really see why. Ribeye is an amazing cut, my favorite in fact. Grilling it on lump hardwood charcoal (sometimes sprinkled with fruit tree chips) produces suficient amount of smoky taste.
But that's just my thoughts...

Life is a game of compromises, but if you do have a chance to add WFO to your kitche no doubt go for it. Oven was the first thing that got functional with my setup, and it produced some of the tasties things (not only pizza)
Not to say im a super pro, but over years I arrived to completely consistent ribeyes (my favorite thing to grill) that family seem to like a lot. Tried reverse sear several times, I must have messed up something because it just didn't turn out right.
I usually preffer thick cuts, but thin...
