So i take the ribs off let them set for 15 cut em up and i have to go wrap my pork butt i was doing for dinner. I come back it to take a picture and they are almost all gone. I was so happy this happened because this tells me people loved em. No pics of the end just full friends.
I’m using a reverse flow stick burner. Temps are pretty consistent not like a mes but I have it dialed in pretty well. I’m not injecting next time and going slower. At least that’s the goal.
I just pulled mine off. 7 hour cook. Not sure how you guys do it with those long cooks. My butts we’re at 206 IT. 1 hour rest then delivered to the graduation party. Pictures later.
I injected mine so had to get to 140 in the 4 hour window. What is the temp on the smoker? Mine have an IT of 175 and have been on 5 hours. First two hours at 275-285, last three at 225. I am trying to get them 8 hours cook time before they get to 204.
Here's my question. on my rig(profile pic) I'm just bought a Igrill2 and I have to run the probes out the door should I silicon the place I am going to grind out to try and keep smoke and heat in?
Interesting I use Hormel butts too but haven't noticed a too salty taste with my injection. I'll keep an eye out and do some experimenting to see if can tell the difference.
