So we had some turkey drumsticks in the freezer that was past time for doing something with.
Decided to cure them using Pop's brine... into the cure. Put them into the bath on Sunday and removed on Thursday. Then dried and put on a rack in fridge till Friday

Just wanted to tell Charles, @Gonna Smoke happy birthday a day late! He's had a rough week with friends that are having bad times so let's help cheer him up! I know he's a great friend that him and his family will do everything they can to help their friends!
So I've heard so much about picana roasts/ steaks but never have seen them around here. Happened to see one at our local grocer... yep, gonna try one. Looked up all the different ways to do them and decided to smoke it on pellet grill then reverse seared.
Kosher salt only this morning then...
Well since I have a great smoker built by @seenred I needed a wood supply. Just went a cut a bit. Gonna have to be dried cuz it's about 25 to 30 % moisture but a plentiful supply of oak.

Kind of a short and sweet thread but so tasty! Wife had some thighs brining... not sure what she used as I've been gone in the field or busy loading hogs. So after three inches of rain I'm home and she left for work till Thursday. Cranked up the kettle with vortex... always a winner!
