    First Brisket

Yea, I forgot to check the grain direction before I started. Didn't really matter though cause it was sooo tender. Next time I'll check for sure and cut a corner off corresponding to the grain direction.

OK...I searched the internet for my answer and cannot find one so I'll depend on the wealth of knowledge here. I want to cold smoke a couple dozen hard boiled eggs with a bunch of cheese. I know the process but, can I vacuum pack these eggs in my Seal-A-Meal??

    Took a "smoke" break

Not much time to smoke anything yesterday, so I broke out the trusty Weber. Used my "homemade "vortex" to grill indirect for a while before crisping up the skin in the center. Moved back to the outside and smothered with Sweet Baby Rays mixed with Cherry Dr. Pepper and a bit of brown sugar. I...

Need help deciding on a new MES 30"

I have the Mod. 20070910 and am very pleased with it. Done many of great smokes both hot and cold with it. Recommend the AMNPS to marry up with it.
