If someone gets something for free, but it's not exactly what was said they would get, should it be brought up to the owner? Say I won a pound of Chicken but I got a pound of beef. But I was expecting chicken. Should I just shut up and take what was given to me free?

Can I freeze ground pork for sausage? In other words, can I store it ground and add whatever seasonings later, as well as stuff it? How would you freeze it? I have a vac sealer. How long will it keep, if frozen correctly?
Making some summer sausage for the in-laws. They like spicy things, I don't. Any ideas on how much cayenne pepper to add per pound? They like it HOT, but don't wanna hurt them either. They do like to sweat a little from the heat too.

OK, everybody in the house except me doesn't like casing on their sausage. To tough, source, etc. So, can I basically make any sausage caseless? Is it even possible to form links or am I stuck in patty land? Can I put a case on and strip before eating?

What's up with pork prices? At my local store butts were $3.59 a pound!!!!! They want about $30 for an average butt!!! I won't be doing much pork at THOSE prices! Any idea what's going on or when things will get back to normal? My smokin' days may be short at these prices....
My pastrami turned out great!! Now on to some pork butts for pullin'. I've done a LOT of pork butts on my smoker, Short Brinkmann electric. Works great for me. I've done as many as 4 at once. I've done AT LEAST a hundred butts in the ~10 years I've been smoking. We love 'em!!
