Last weekend my prime rib turned out great. So I though I would try something similar with a beef tenderloin. Then I saw an extra pack of bacon in the drawer.
Decent price at Costco.
I cut off about 8 inches off the large side of the beef tenderloin.
Rubbed with a little EVOO then...
Took about a tablespoon of fresh rosemary, a teaspoon of fresh thyme, couple large cloves of garlic, some kosher salt, little cayenne, and several tablespoons of EVOO.
Mixed up in the food processor a little.
Got my chops from Costco.
Only making half of them because the wife doesn't...
Decided to give prime rib a try yesterday. Picked up a 4.75 pound ribeye roast a Costco.
Good looking piece of meat.
Rubbed some EVOO then gave a pretty heavy dusting of Cavender's, garlic powder, and onion powder.
Smoking at 240ish with hickory. About an hour into smoke.
2 hours...
I'm not even sure what to call this. Wanted to come up with something different.
Started off with chicken breasts, Jimmy Dean Country Mild, bacon, sharp cheddar, jalapeno, fresh garlic.
Mixed up about 2/3 lb of sausage, some cheddar cheese cut into small cubes, half a jalapeno diced, 1...
Smoked some pork steaks tonight. Wow they were good. Never going on the grill again!
All seasoned up. Light coating of EVOO then seasoned with Cavender's Greek Seasoning and garlic power.
Smoked for around an hour and a half around 240ish.
Here are the burgers I made tonight.
I first cut up about 6 strips of bacon.
Crisp your bacon in a pan. Here is what else you need. About 2 pounds of lean ground beef, 2 eggs, worcestershire sauce, steak seasoning.
Using shredded sharp cheddar and mozzarella.
Combine your meat, 1...
This was without question the best appetizer I have made. You must try this one!
Pretty simple to make. You need raw shrimp (21-25 count per lb), Franks Original Hot Sauce, bacon (half slice per shrimp), Tony Chachere's Creole seasoning, kosher salt.
Peel and devein your shrimp. I brined...
Remember the $4.00 per bag of RO at Walmart thread I posted a few days ago. Well I just happened to be in there tonight and thought I would help them clear out their stock.
I think this will last me a little while.
Was wanting to try making some bacon, but cant find anywhere to buy bellies. I did find one butcher about 25 miles away that can order them, but says that they are $4.00 a pound and the minimum quantity that he can get is 2 bellies that weight 8-10 pounds each. I don't think I wanna drop $80 on...
Thinking of dumping Time Warner Cable. The HD channels are all the time freezing or have a lot of artifacts.
Anyone have any experience with DirecTV with HD? I had DirecTV years ago and liked it at the time.
My first attempt at smoked wings. Turned out pretty darn good. Although I did overcook them a little and I'm going to smoke at a lesser temp next time. I had it between 300* - 325*.
Took em off and covered in Louisiana hot sauce and melted butter mixture and dipped in Blue Cheese. Yum!!!
Made a simple pepperoni and mozzarella fatty yesterday. Wife is not a fan of any veggies.
Used turkey pepperoni which is pretty awesome. Not as greasy as regular and tastes just as good.
Of course had to wrap in bacon.
Letting rest a few minutes.
Great taste for such a simple fatty.
Walmart has RO lump fro $4.00 a bag on clearance here. I guess they are not going to be stocking it anymore. What sucks *** is they are the only ones that carry it around here. Might wanna check your local wally world and stock up!!
Picked up this packer at Walmart. They are about the only place around here that carries them for some reason.
Little rubbin'
Firing up the WSM.
Sure glad I got the 22" WSM. I don't know how you would fit one of these on the 18"
How's that for a good looking brisket?!
All sliced...
I've been wanting to get some of these from Costco and give them a try. They are pickled cherry peppers stuffed with prosciutto and provolone.
Here is what they look like.
Put them inside some sausage.
Used the MES because it was getting late and didn't feel like firing up the WSM...
Now this turned out tasty!
Used a combination of pork and beef. Mixed up all my ingredients and put in a disposable aluminum pan. Poked a few holes in the bottom around the edges to drain excess juice.
About an hour into the smoke.
Added my topping.
Now this is a point worthy meatloaf!
Thought I would share one of our favorite ways to make ABTs.
You need prosciutto, jalapeno peppers, chopped onion, and some breakfast sausage.
Mix your onion with your sausage and fill your peppers.
Wrap in prosciutto.
Toss into the smoker.
I really like the prosciutto wrapping. not...
