Hey, you all. I have been searching here and other places. We plan to get a 120 lb hog. (we did a 100-110 lber a few years ago) From what I read that should feed at 1/4 lb per person, maybe 160 people, right? Just wanted some thoughts. We plan to supplement with butts.
Thanks.

We also did 12 butts, 1 brisket (for fun since I am learning this). I also had 2 UDS and a vertical smoker on site. (we did this...

I have not had the drum out in maybe 6 weeks. I now have a little more time on my hands. (last day of work was Oct 1st - more on that later) My Dad brought up some of the sauce I grew up on (Leigh's Kevil, KY and Starnes in Paducah, KY) as they are in town for the arrival of boy # 3. (not yet)...
I started 3 birds at 6.30am (took the back and breast bones out). 2 on the lower rack and 1 on the upper. (I use an ECB electric)
My neighbor had some of the smoked chicken I did last weekend and found out I was going to smoke today so she brought the 3rd one over last night.

I was planning to send these pics to a new member (MartinHouse2000) so I thought I would post them up here. He wanted to see what I hold the hickory chunks in.

Thought some of you might find this interesting. I have not watched Bobby Flay. Used to live in that area but did not hit this Que joint.

I am going to do two butts on Thursday. I have never done this. Is there any temp differences between upper and lower rack? I have not put thermometers in to check this but plan to. Anything else a noob should know for doing two at once? (it is for a potluck at work) I have done one...
I thought I would post a few pics here. This is my 3rd time doing a shoulder and the first time using a full 7.5 pounder. (other two were 3-4 lbs) THANKS to SMF for the great info here to make this one my best yet. It was done on Nov 9th with the air temp at maybe 40ish.

Hello, All. I am another newcomer to the site and also a newbie in smoking meat. I found this site via google after missing pork BBQ enough here in Michigan to try and make my own. (western KY style pork BBQ is my preference - Starns in Paducah or Lee's in Kevil if you are familiar with that...
