i want to throw a few bell peppers in the smoker with some sausages i am smoking. they are just plain, not stuffed.

anyone tried smoking store-bought italian sausage in the casings? i was thinking about throwing some in the next time i smoke. do you just lay them on the shelf or on foil?
was at the local shop-rite 1:00AM this morning to get a butt or shoulder and all i can get was a 6# bone-in-loin roast @ $1.19lb. used a wet pastey type McCormicks Hickory rub.

i have a bunch of country style ribs in my freezer. they are not a rack, they are each cut seperately. anyone try 3-2-1 with seperate ribs before?
any suggestions/advice? i'd rather smoke them than bbq them, and planning for the weekend. i've done racks before, but never seperated ribs.

ok, this topic got the best of me. i was off work today and took down a few trees for a friend of mind this morning. on the way home , i thought, lemme get a boneless leg of lamb to throw on the smoker!!
so it is a done-deal!! a 6# boneless with a quick rub along with sliced elephant garlic on...
smoked some chicken today, came out good!!
on the top is a split chicken which i marinated in a hot sauce over night.
on the bottom 2 whole 4# birds..beer can style but have applejuice in the cans...not beer...with spices and garlic, plugged up the neck with a potato, also rubbed them last...
