Yesterday was a great cold day of cooking. We started off cooking for a Christmas party for the neighbors. Fed about 60 people.
While meat was cooking we also built a couple of uds and tried them out on some ribs for ourselves. That uds will probably be my comp rib cooker from now on.
I am trying to put a recipe together for Chipotle sausage. I will be using a jalapeno cheddar sausage recipe but I don't know where to start if I replace the dried jalapeno with Chipotle powder.

It's a beautiful memorial day to fire off the smoker. Thanks to those who gave their lives for our freedom.
Today I decided to fire off my favorite cooker to do a 12 pound brisket.
Snake method topped with pecan and hickory. A 3/4 circle of charcoal will peg my kettle out at 260 for...
Since my gas grill was recently decommissioned my wife and I have been having grilling withdrawals. I started looking at egg cookers and ended up getting an akorn(was going to get a vision but didn't want to get into my fishing $$$). I am impressed! This thing is easy to control and does a...
How was your learning curve? I started using a stoker ii yesterday and did much more work then I did without it. I have a vault type smoker and it over shot the temperature past the point of getting it back down. I did the last half of my sausage cook yesterday with the door cracked open because...
I am somewhat new to sausage making and yesterday I did my first ever batch of smoked sausage links. Last year my wife bought a Gander Mountain chipotle kit and I blew off making it till my neighbor gave me a pack of chipotle venison sausage and I really liked it.
I mixed it 50/50 venison/pork...
Does anyone use charcoal and wood to smoke sausage? I have a large insulated cabinet smoker and have smoked snack sticks German and summer sausage in it. They come out ok but I have a hard time ramping up the Temps like I'm supposed to. I just purchased a stoker, one because I wanted one, but...
I'm looking into buying a guru and am wondering about the bulkhead adapter that comes with the kit. Will the bulkhead adapter screw into a ball valve or do I need the 3/4" valve adapter? Also if I need the 3/4" adapter will they trade out adapters in the kit?
My wife and I both had surgeries at the end of last year and our church family helped with some of the doctor bills. We are both back on our feet and decided what better way to thank everyone than some smoked Boston butt!
I rubbed them down with mustard and rubbed with oakridge beef and pork...
Here is the baby I built with the help of my son and my dad. The outside dimensions are 4'x3'x2'. The firebox 1x3x2 and the cook chamber is a little less that 3x3x2.
The frame.
I have a gander mountain chipotle sausage mix that I received last year. On the instructions the mix says to add cure but I would like to keep the sausage fresh and not smoke it. Would the sausage still come out ok if it's not cured and smoked? Also if anyone has used this same mix let me know...
