    Pit Boss Chucky.

I love doing chuckies on my PB 820D. Made 8 trips out to the garage today to stir a pot of chili, out of the wind, rain and snow.

    Chili for the smoker

I've been stirring that pot every hour since 0800hrs and finally gave in to the temptation to try a "taste bowl". Oh yeah, but the tommies need to cook down just a hair more. Everybody, thanks for your comments.

    Chili for the smoker

Just wanted it to sit overnite before I put the heat/smoke to it. Thank Ms. Bear but it's hard to believe you ain't made a pot of chili yet. Yep, we are both sitting in the same weather system. I've been hiking out to the garage every hour to give it a good stirring every hour or so. I...

    Chili for the smoker

With the cooler temps setting up in S/W MI. I had a hankering for a bowl of chili but the freezer was empty so thought I'd whip up a quick little pot. Braised off the onions and peppers, lightly browned some 80/20, added 4 cups of flame grilled toms, 4 cups of store bought chili beans and3 pkg's...

    Mother Nature's Fury

I've lived in snow country most of my life and love it, until I've got to shovel. Thank goodness the Big Lake tempers those storms from us a little. Can ya still get to your smoker?

    Chucky for Dinner

Fired the PB up at 1430hrs on pre-heat and set the Grilla Alpha Dual Smoke to 250* on Pro smoke. After 1/2 hour, flopped the chuck in the center of the grates, closed the top and walked away. At 1700hrs I thought of trying something a little different for me. I removed the chuck, removed two...

    Christmas Thank You.

Since the mail lady got the centers, momma and I ate some of the trimmings, OMG. She squished up some cheesy taters and I thawed out some pan-fried gravy and we made a meal out of it. Guess I need to go shopping, out of biscuits in a can and whole corn.

    Christmas Thank You.

Well it's that time of the year were you show service people how much you appreciate their work. Our mail carrier has been doing a great job since she took over the route. Pork tenderloin smoked for 4 hrs. a 180* over apple topped w/ Sweet Baby Rays Honey sauce. Of coarse I did enough to were...

    Bambo Cutting Boards

We do have a plastic board also that I refuse to use. Even with a finely honed edge on my knives, they wear down faster on the plastic. Since I've forbidden, yes I used the work forbidden, my wife to use my 10" Old Hickory on the plastic, I bought her her own set of knives. Guess I'll give it a...

    Bambo Cutting Boards

My wife has never liked my large and heavy Maple board so she bought me a large bamboo board. Looks pretty but when I did a pre-wash I notices all these like fiberous ends sticking out. This will not do, shusssssss. Kinda afraid to fire up the sander or should I just "food oil" it?

    Tired of Left Overs

Well I gave her a one hour run with the control turned all the way down, 180*. It was running a solid 205* on the control sensor with the dome therm reading 195*. Now this is in my 820D which is 3" longer than the Silverback and I have not done the "fine tuning" to the Alpha Dual controller yet...
