    I mean, is quite delicious. Denver steaks from a sub-primal chuck roll I recently processed. Basted in butter, garlic, and herbs. Pan-seared blue-rare, like a good steak should be.

    Yeah, was a great time. In fact, opened a new opportunity as well. Just got a call from the event planner at the Resch Expo Center across the street from Lambeau Field in Green Bay inviting us to be a vendor at Meatfest and also asked if I could do a 20 minute demonstration. Uh....Heck yeah!

    Vending at the Axe and Knife Throwing World Championships in Appleton, WI. Going to have a booth for our rubs, dips, salsa, as well as shirts and hats. Been lasering patches and pressing them onto hats as well as pressing shirts all day. First big event for us so pretty pumped. Some of my work.

    We do a "fancy dinner" at least once a week. This week, bone-in pork chops were on sale. Decided on pork au poivre with parmigiano reggiano mashed potatoes. May be one of my favorite meals in recent memory, and the kiddos always enjoy a flambe show.

    Well, for me I've found wrapping the sandwich to make a difference in the end product. It tightens everything up to hold together better, if you used any oil-based dressing it seems to permeate the sandwich bettwen when wrapped, and if its a hot sandwich it steams itself in the wrapper.
