    Country Time Lemonade Rub

Recently my wife and I had dinner with friends at The Woodshed in Fort Worth - a Tim Love restaurant.  It was quite good.   My friend and I got to go into the smoke house which had about 12 smokers which were the best I had every seen (made me very jealous).   Anyway, the pit master told us he...

    Lower salt rubs

I have been trying to use rubs with less salt lately - finding that sugar is usually substituted.  The rubs I have with sugar end up delicious mind you, but just wondering what everyone's favorite rub is.   I have never tried Jeffs rub and will be putting in an order to try it out (and give some...

Q-View & Graph! BBQ data for my wussy Briskey and the break-in of my new offset!

JarJar - I received the Igrill as a gift and recently used it on an overnight smoke - it performed perfectly.   I had one probe in the meat, the other on the grate (same as the Qview in this post).  I used it on my Iphone and the graph was really neat.  Nothing unexpected.   I am looking to see...

    What charcoal do you use?

I use lump for the most part, it does burn hotter but that actually helps on long smokes - personal preference!

    Brisket for weekend camping trip

Ok, so the camping trip is over.   Let me just say the brisket was the star of the show!  One my friends brought a buddy who does tons of BBQ competitions and nearly ate half of it.  That was about the best compliment I could get and made my weekend!

    Brisket for weekend camping trip

One other thing - using lump charcoal and hickory sticks from my dad's land.   The lump I got at Costco - 35 lb bag for 14 dollars - ranchers select from the "original charcoal company" - never heard of it but so far it is the best lump I use.

    Not so newbie!

So I have been meaning to post on Roll Call for about a year, since I started looking at this wonderful site.   I live in Benbrook Tx which is southwest of Fort Worth.  I have an Oklahoma Joe offset horizontal smoker.   I have modified the stack and recently replaced grates with newer cast iron...

Smoking a 9 lb brisket plus a couple of small pork tenderloins for our weekend camping trip tomorrow.  Brisket rubbed with some Adams rub and coarse ground pepper.  1 tenderloin rubbed with Grub Rub and wrapped in bacon.   The other rubbed with some chipotle / Texas rub I got at HEB and wrapped...
