When I was a judge at my local fair for BBQ the best ribs I had the team did a 3-1-.5. You could take the meat off the ribs with your lips. (I am not kidding I did) Once I get this new smoker done I want to give baby backs anouther try. Right now my off set it a little to small for making...
Thanks,
I guess that is why black can be better. I was thinking of trying red just have a big red out on the deck. I will look at what colors I can choose from that are at a good cost and go from there. Since I have to paint 2 55 gal barrels I know I am going to go though a few cans.
I realy do not know were to put this. I am just wondering is there any reason why most smokers are black? I am thinking when I paint my smoker do I want to do black or maybe a different color. I am just wondering if there is a reason for black.
Going around my house today I did some checking of what trees I have that I can use for smoking. I have a few oaks and nees some trimming and I did did one today. In my search I found out I have at least 100 birch, but I also have a few maples. I have 1 suger maple to the front of the house...
I am getting ready for my double barrel smoker in the making by doing some tree trimming today. We have a huge oak that is right next to deck and right over my smoker. Today I cut down two dead braches. The first one is about 6" think at the start and is about 15' long and end at about 2"...
Well hit the stores again. I found the grates at a local steel store in town. For $25 they will cut it to size and everything me and same with the angle iron.
For the stacks I went to my local hardware store and I found I could make 4" stacks on each side with a damper inside for about 20...
Well after my propane plan got nixed for liablity reason I had a nice door open up and I now have a supplier for my 3 barrels that I need brand new form Trilla Drum in Chicago. The sweeter part what that I found out that ACE sells the BK150E for $60 and the BK50E for $30 and I can order them...
Just wondering for Maple I have a silver maple is that any good for smoking?
I just found out I might be able to get my hands of a full crabapple tree I have to see though.
Well one plan killed but anouther door opened. I am finding out with steal prices and liablility reasons getting a tank is hard. But with that door closing a new one opened. My father remembered a place down in Chicago that made 55 steal barrels that my grand father had to go to. The place is...
Yea I am thinking of building the base for the trailer and have that to hold it. On the deck I think I can build a small storage area under it for my lump coal and wood.
BTW just wondering with this setup would I be able to use larger log like 1/4 or 1/8th instead of just the small 10lb bags...
Wow thanks. That thing is huge. Does not look like it will cost that much though to make. I just have to find out how much it would cost to get all the cutting done. Not sure 100% if I would do the full trailer but I think I could build it into the deck and have a nice setup.
Ok got my first slab of bacon done. I made I would say is about 2.5 lbs. I let is stay in the frige and cure for 6 days. I smoked it at about 125 for 7 hours. (I think I made a mistake when I but it skin side down because the smoking did not get into it till I filped it. After smoking I cut...
Yesterday I got our first hog and I asked the skins for making dog treats. Well I have to say they take a long time to make. Any ways over about the 14 hours about 3-4 cups of fat have dripped off the skin into my catch container. That just stays under my grill well I pulled a chew off the...
Thanks,
I just have a quick question I see your brine was
5 quarts of ice water 38-40 deg
1 1/3 cup powdered dextrose
1/3 cup instacure #1
1 lb salt
The cure I have reminds me a lot of brown suger in textrure.
So for me would I take what you have 1 1/3 cup powdered dextrose , 1/3 cup...
Today I picked up our hog that we got at the fair this year and I have one about 2-3lb side in the fridge defrosting. The other 5 are in the freezer want to make sure I get one down before doing them all. I did get the cure from the butchter and they stated to us a 10-1 ratio. So I am guessing...
O trust me I am going to be very carefull. I am most likely going to fill it with water and stand the tank up when I cut it. That way I do not have a chance of a air pocket when I cut it when it would be in its side and cut. I know some guys that do scrap metal so I might ask them for tips...
Thanks srmonty. That is what I am wishing for. Lucky for me and being out in the county I have at least 5 places in about a 20min drive from me I can hit to ask.
Ok good to know.
I just did a search for it and found a quick fix. You fill the talk with water. that way it pushes out any fumes and brings down the % of O2 in the tank.
