    Talledega meat fest (pics)

Jerky is done. Teryaki with a kit I bought. Turned out pretty solid. Just delivered today was my food saver and I'm not sure how ive lived without this device! So I'm headed to the race next weekend in Talladega to meet up with the wife's family. I'm going to cook a bunch of meat and vacuum...

Saw this for the first time at Costco. Thoughts?

It definitely looks like skirt. When I first saw it from a distance I got all excited because it looked like a point. Hopes dashed.

Saw this for the first time at Costco. Thoughts?

At first glance it looked like a big chunk but it's 2 pieces. I thought for a second it was a point but no.

Pork Belly Burnt Ends are so good it's stupid

I'm headed to Talladega for the race in a couple weekends. I am going to do pulled pork this weekend and vacuum seal it to take to the tail gate. You have now inspired me to do some pork belly burnt ends to take as well. Great stuff!!!! My pit will be blazing for 12 hours anyway so why not...

    Shoulder taking forever

Make sure to do a boiling water test on your probe and don't trust the thermometer built in the smoker. I always attach my probe at grate level. It's never bad to have the meat done 2 hours (pork shoulders/butts/briskets) early because then you can wrap it and rest it in a cooler (which is...

    Shoulder taking forever

Welcome to the stahl my friend. This happens around 160 and there is no way to know how long it will sit at that temp. You are passed the stahl since it's at 170 but you can speed it up by wrapping it in foil with a little apple juice until it reaches your desired temp. Good luck! Enjoy your...

Butt and Boil update! (With final product pics)

Thanks! Yeah, I did watch a video on how to bypass it but I didn't have time to do it. I get it's a safety feature but sure is a pain. I probably relit it 4 times because I was in and out preparing the pork and trying to time everything in the boil correctly. I ended up making my neighbor...

Butt and Boil update! (With final product pics)

So everything turned out great. 14 total hours on the butt to get it to 200. Panned and foiled it when it hit 185 because I was running out of time. Here it was finally done. Here is what I got after it was pulled and before adding in any sauce. I did use pan drippings and a mix of...

Beautiful butt and boil for a baby shower. Pics!

Thanks! Firing up the pit now. Took me a half hour to devein the shrimp. Gonna let the guru do the work all night. Going 235. I'm not going to be home from 8:00 am until 12:30 so going low and slow and probably won't be able to wrap. I have to trust the wife to check the temp while I'm gone.

First spares with Jeff's rub and sauce. PICS!

Thanks!! At one point in time I was also using brown sugar in my foil. I found it to be way to sweet for my liking and it would over the power the smokey flavor. Try cutting out the brown sugar to see if you like it. I am also going to try to cut out the rub in the foil and cut back on the...

First spares with Jeff's rub and sauce. PICS!

Thanks, all! I think I've found a good balance between 3/2/1 and hotter at 275. I think next time I'll probably modify the rub as mentioned and do a little less tiger sauce and butter just to play with it.

First spares with Jeff's rub and sauce. PICS!

Did a rack of spares. Rubbed and rested 2 hours in fridge. Set the guru and wsm for 235 with oak and hickory. Smoked for 3.5 hours. Wrapped with squeeze butter, thin line of tiger sauce, a little more Jeff's and a few table spoons of my spritz (3/4 apple juice 1/4 cider vinegar which I...

    Beef ribs w/ pics!

Thanks, all!! Carousel, woo!! Yeah, I use my patio that's screened in. It gets dirty real fast being in florida with the pollen, rain getting inside, and when they mow back there twice a week it makes for a messy situation. Since we didn't utilize it very often, because it is a pain to keep...
