So here we go. I'm pretty excited so I'm posting the prep pic. I demanded I do a cook for my buddies baby shower this Saturday. 10 lb. Butt and 5 lbs. of gulf shrimp straight from the shrimp docks here in Tampa for a low country boil. I will be starting the butt at about midnight tomorrow so just rubbed her with Jeff's and ready for the fridge . Got some work ahead of me deveining the shrimp. Updates are coming tomorrow evening.

Here she is when I woke up at 7 am. Put the lid back on and out of the house until 12:15. Temp was 162.

I get home to this glorious beast! 12 hours at 230 and she was at 183. Pan with squeeze butter, a little tiger sauce and some apple juice in the bottom and covered the top with lines of squeeze butter. Kicked pit up to 250. More updates coming.

Dang those are some big shrimp!

How will you serve the pork?

Those are large shrimp at $10/lb. They also have jumbo and collasal but i like the size of the large for boils. Just doing pulled.

Thanks! Firing up the pit now. Took me a half hour to devein the shrimp. Gonna let the guru do the work all night. Going 235. I'm not going to be home from 8:00 am until 12:30 so going low and slow and probably won't be able to wrap. I have to trust the wife to check the temp while I'm gone.
