    Country style ribs AGAIN!! with Qview

    Our local Dillons butcher once again had some fine CSRs cut and on sale!! Smoked over apple at 230F. Did a basic 2-2-1, mopping some Sweet Baby Rays after the foil. Oh my, was good!! Only bummer was the lack of leftovers to take to work!!

    Doing a big sirloin roast!!!!

    This cut was called "Beef Loin Top Boneless Sirloin Butt" . It had a fat cap and some marbling. I had never heard of that cut, but the dude at Sams says they have them all the time.  I smoked it at 230-240 for about 6 1/2 hours.

    Country Style Ribs with Qview

     I have not done these in a while, and thought it was time. I used a light "dusting" of rub and then smoked over apple at 250F. I did not foil them. I spritzed with apple juice hourly.
