    St. Louis cut ribs

Smoked up a rack of ribs in the MES and finished them on the charcoal grill. Start with a basic memphis rub and into MES for planned 3 hrs at 250F using maple wood chips. At 2 hrs I lit my OKI Joe and 1/2 hour later I moved the ribs onto the grill on indirect. I put the ribs on direct for a...

    Beef burger

It's burger night. Grilled up a beef burger with mustard powder, dried tarragon and diced onion. Toasted the buns on the grill. Grilled up the burgers and put a melty blue cheese. Our cheese monger did not disappoint. It is called Blue Moo and from a place in PEI, Canada.

    Slicing meat thin

I have a good meat slicer - that is not the issue. My issue is slicing it thin when it is fresh out of the smoker. To me it would seem counter productive to put in freezer when I've spent 4-6-8 plus hours getting it hot. I also have fairly good knives that I keep sharp (trust me, they can be...

    Chicken for Canada Day

Put chicken pieces in the smoker this afternoon. Seasoned up with our favourite rub. I remembered to put some seasoning under the skin. Put some potatoes in smoker and let for about 2 1/2 hours at 250F. At the 2 hr mark, I lit the charcoal grill. Finished all on the grill on indirect. I put the...

Meatloaf with pasta salad and beer bread

Beer bread is a type of quick bread. No messing with yeast as guess what is in beer? You mix beer in with fairly standard bread ingredients and bake for 1/2 hr.

Meatloaf with pasta salad and beer bread

OK only one of the three done in smoker. Smoked a beef/pork meatloaf with some veggies in it. Smoked for 3 1/4 hours at 255F. Made up a pasta salad and we baked a loaf of beer bread. Beer bread a quick bread. Only takes 1/2 hour to make and bake + 1/2 hour cool-down time. Tasty and gets the...

    Chili sauce

We've not able to buy our favourite chili sauce for awhile. Does anyone have a recipe for chili sauce they could share? We prefer this instead of ketchup in bbq sauce as well as just as a base condiment. Thanks!

    Making my own barbecue sauce

I have a number of recipes for BBQ sauce. THe fun is tweaking the seasonings to your taste. Equal parts whiskey, brown sugar, red wine vinegar and chili sauce (or ketchup if need be) Season to YOUR taste

    Burger night

Friday night = burger night in this house. My wife discovered we were out of burger buns so came up with burger wrap instead. I heated up the tortillas first. Discovered that they get toasty VERY quickly over a charcoal fire - VERY! Put on, close lid, sip of beer, open lid and pull tortillas...

    Pork belly

Smoked a pork belly for 4 hours in the MES. Just before it was done, it started to rain. Not complaining as WE NEED RAIN! . Sliced up and served with a salad of tomato, mushroom, green onion and italian dressing. There was also bbq sauce and made up a batch of cornbread from a mix. Tasty all...

    Cottage/shepherd's pie

Made a batch of shephard's pie (ok, cottage pie as not use lamb). Did all in a cast iron pan on the grill. The only other substitute is use hashbrowns instead of making mashed potato. I've put hickory wood chips on coals to get smoke. Yummy!

THanks. The weird part is the phots that show are from my wife. We have identical phones. Only an issue posting here. Ah. well, the pulled pork was tasty.

    Pulled pork from pork roast

Took a pork roast, seasoned it up last night and put in smoker for 8 hrs at 275F using maple wood chips. Quite yummy. Didn't need bbq sauce. Yes, my wife was wearing the appropriate t-shirt. :D A question: I had a picture of the roast after 8hrs in the smoker and no matter how small I make...
