I am a new owner of a Pit Boss and want to do some Disney style Turkeylegs. I can't find them anywhere, even on line. Any ideas or is it a seasonal item?
I did a Google search for DisneyTurkeylegs. Most of the brines are curing brines, several recipes had some aromatics added. One article said Disney buys legs from huge turkeys, like 50# birds! So I guess I've been making Disney Drumsticks for a long time.... :emoji_laughing:
Going with a modified pops brine. Added a few seasonings/spices.
Been brining for a little over 36hrs., gonna pull em, rinse em and let dry in the fridge for a couple hours.
My question, what temp do you smoke the legs at? Researching online and I’ve found a big range imo, of 225-350? Thoughts?
Cured smoked turkeylegs are the top or closed to top selling food at Disney. These look great. I’ll have to try it with chicken, I’ve done turkey and they were awesome. People devoured them. I love that rack too. Going to order one tonight!
Here is the brine if anyone has suggestions I'm more than open as I've never made these and we love turkeylegs. I'm hoping for a Disney like copycat but have to settle already as we can't get jumbo legs anywhere.
I'm thinking they sell smoked turkeylegs at Disneyland, and this is a knock off of them. We have a county fair near us that sells them...for about $12 per turkey leg! Yikes!

Sounds good to me. I’ve done Turkeylegs in Pops to do the Disney style legs and it was delcious. I assume you pulling at 162 to let it rise to 165. Post up some pics, should be delcious.
That is a very standard flavor brine salt-to-water wise. I would inject them, and put some additional brine in the zipper bag. This way it's working from the inside out, and the outside in. 12 or 15 hours should work.

This is something I have been wanting to give a try. Anyone here done them ? I have seen many different ways on you tube. Better known as the disneyturkey ham .The taste of ham on a turkey leg has me drooling.
