Thanks George, I read that I have to hit it hard with the oil both inside & out during the seasoning, I have a lot of oak logs that we keep for our fire pit so I'll have to cut a couple down to size, I'm really glad I picked up the mods after all the reading that I did, what are the chances that...
I have an okJoe. The mods for me were more about regulating temps. Without some of the ones I did, it was hard to control temps. Now she generally runs great, and still leaks some smoke.
Regarding science or art, it's both. The science to cook properly, and the art to make it good.
Hello thinking about buying a OKJoe smoker thinking about wielding the firebox and main chamber together and making it reverse flow any and all input is appreciated
Shipping is going to be the bear.....I looked at more expensive smokers, but the shipping was crazy. I settled on a COS OKJoe, couple of mods and it produces pretty good que.
I don't know....Horizon, Lang, Yoder, Gator Pit....it will still be the shipping.
i have a okjoe w a baffle plate and have done a number of the same mods, but without pictures its hard to say what exactly the issue is. id ask did you use a digital thermometer or just go by the factory temp gauges cause those are useless they usually run 25-50 degrees off
Hey y'all. My names Jesse and I'm so excited to have finally joined. This will be my 3rd year smoking and my first year doing so on a semi real smoker. Year 1 was using my gas grill with a wood chip box. Year 2 was a cheap $100 walmart offset smoker that I trashed by the end of year. This year I...
Howdy folks. Sorry I haven't participated in a while. Had a lot of real life going on, both really great, and really awful. Have to keep moving though. Glad to be getting back to one of my favorite forums though.
I just picked up an Oklahoma Joe Highland smoker yesterday, and hopes are to break...
Hello
I'v been smoking using a Masterbuilt electric Sportsman Elite for a while but I just bought a Oklahoma Joe Highland Offset smoker yesterday so I thought I would join the Smoking MeatForum.com in order to know a little more about Offset smoking. I read a few posts about "seasoning" and I...
Ok. So my one grill is just too small for doing any offset smoking/cooking. Looking for a good grill without breaking the bank. With all of the posts I have read thru the years. What grills stand out. Looking at Oklahoma Joe style units. Would love to hear what the members think. Don't mind...
Thanks Sauced! Although it was my first smoke on the OKJoe, I am very impressed and a bit obsessed honestly. I starting thinking about what I wanted to smoke next as soon as I pulled the ribs and fatties off the grate! Unfortunately I will be out of town this weekend and won't be able to get...
Sounds like a great price for that smoker.
I know there are a lot of mods that the guys do to them, but since I don't have one, I really don't know which ones are the most important.
Here's a link to some mods.

There is a really long thread (likely multiple threads) on here about all the mods that people do to their OKJoes to make them more efficient and stable cookers. Also note that the OKs that are being sold by the box stores now are not the same ones that are discussed in many of the older...
Hello all. I just purchased my first OKJoe Highland (used) and can't wait to fire it up. This thread is amazing and has a ton of good info. I am in the process of making a tuning plate and a charcoal box now as the two mods I want to do first. The tuning plate I am making is going to be made...
I am a Network Admin by day, father/husband at night, but enjoy grilling/smoking meat in any free time I have. Nothing like enjoying your favorite beverage while tending to a smoker for several hours and sharing the fruit of your labor later with family and friends. I have always borrowed large...
I am going to attempt to list my OKJ Highland modifications, reasons, and observations.
There are many helpful threads throughout these forums dealing with the Oklahoma Joe smokers, perhaps we can compile some information here in a running thread to assist everyone who is using, modding, and...
