Agree with all the above. You might get by with adding cubed porkbelly in the mix but flats are really to lean. IMO you would be better off cooking the flat like a brisket should be and picking up a fatty chuck roast to cube up for burntends.
I watched a video recently from Matt @ Meat church. He did porkbellyburntends with a peach habanero rib candy and some sweet BBQ sauce and Honey Hog rub. He cooked them right in a pan ( fat side down ) to cook in its own grease. When they get around 190-195, foil pan them with the sweet...
PorkBellyburntends... Stuffed muchrooms ... ABT's ...

ABT's are a lot of work but can also be done with mild chiles for those who don't like hot. Porkbellyburntends are another good choice. I've never done poor man burntends with chuck, but plenty of others have. Should be a pretty straightforward cook and nothing like a test run to see how...
PorkBelly Tacos gets my vote!
Several ways to go about seasoning it for tacos.
and it can be used for many other things afterwards, e.g. chile, pozole, rice, beans and more.
After cooking the whole belly, you could even cut half of it into large 2" cubes and make Mexican Flavored BurntEnds...
Yesterday I got myself a bone in porkbelly from Booker, weighing in at 5.6kg. I was thinking about removing the rib section and smoking those then halving the remaining belly, smoking (or roasting) half and then having a stab at making bacon with the rest (or maybe burntends that we're not...
We were in charge of the appetizer portion of Thanksgiving this year, so I did the PorkBellyBurntEnds as a center piece or a charcuterie board deluxe. I used a standard pork seasoning for initial cook. Then added the glaze which was an apricot BBQ sauce that we added honey and habanero...
So I picked up a porkbelly from a local ‘Mexican’ meat market. Went in just to see what they had, and their price was close to $2/lb less than HEB’s price. It was a whole belly, weighing over 15 lbs., and the appearance was of little less quality than what I get at HEB. But based on the price I...
Decided to give PorkBelly a try. Thinking of going with my standard as far as rubs go:
Onion Powder
Garlic Power
Salt
Pepper
Celery Seed
Cook low and slow until done. Now I decided since this was my first shot not to get a slab. I went with pre-cut from Costco. Anything I should look out...
Ok I have a report. I went to Q39 and it was very good BBQ.
The atmosphere was nice, clean, and very good looking.
I got a 3 meat plate and added 2 more meats, BUT I did not get the brisket burntends.
Meat 1, the sliced brisket which was flat meat and was good tasting and very commendable...
